Pumpkin Recipes for the Halloween

Halloween is almost here, most of us are probably busy at selecting your Halloween costumes, and picking your “Jack - o’ - lantern” pumpkin.  At this time of the year, many of us might only consider buying a pumpkin for decoration in the house, and carving a pumpkin for the Halloween entertainment.  We might also forget that a pumpkin can be used to make a delicious Halloween recipe for the whole family to taste.  There are two recipes that we can share by using pumpkin for this Halloween holiday.

Curry Chicken Pumpkin Soup:

Ingredients:

4 bacon strips, diced

1/4 cup chopped onion

2 cups cubed peeled pie pumpkin

2 cups chicken broth

1 can diced tomatoes, undrained

1 teaspoon curry powder

3/4 cup cubed cooked chicken breast

1/3 cup cooked small pasta shells

In a large saucepan, cook the bacon and onion over medium heat until bacon is crisp; drain.  Add the pumpkin, broth, tomatoes and curry; bring to a boil.  Reduce heat; cover and simmer for 8 -10 minutes or until pumpkin is tender.  Stir in the chicken, corn and pasta; and heat through.

Pumpkin Salad:

Ingredients:

1 cup cubed peeled pie pumpkin

2 teaspoons canola oil

1/4 teaspoon salt

2 tablespoons sunflower kernels

2 tablespoons finely chopped pecans

2 tablespoons minced fresh cilantro

2 tablespoons chopped red onion

1/2 cup plain yogurt

1 teaspoon ground cumin

1/2 teaspoon grated fresh ginger root

Place pumpkin cubes on a baking sheet.  Brush with oil; sprinkle with salt.  Bake at 375 degrees for 35 - 40 minutes or until tender.  Cool completely.

In a large bowl, combine the sunflower kernels, pecans, cilantro, onion and pumpkin.  In a small bowl, combine the yogurt, cumin and ginger.  Pour over pumpkin mixture; toss to coat.  Cover and refrigerate until chilled.

On this Halloween, pumpkin is no longer considered as a decoration in the house.  Other than a creamy pie, you can turn the pumpkins into a delicious recipe of soup and salad with the right ingredients.
